There is mold on my cheese, can I still eat it?

Cheese is a living thing and a little green, grey or white mold growth is perfectly normal. If the cheese is firm and aged, like cheddar, gouda or parmesan, you can cut or shave off the mold and enjoy the rest of the cheese. Put a clean wrapping on any leftovers. If the cheese is fresh like cream cheese, fresh mozzarella or ricotta, you should discard the cheese and not eat it.

How should I store cheese?

Storing cheese in plastic wrap can change the taste and quality of your cheese. Wrap your cheese in cheese paper, wax paper, or parchment paper. You can put these in a plastic or glass container or bag to help retain moisture.

How long does cheese last?

Different cheeses have different life cycles, but here are some guidelines. Fresh cheeses like mozzarella, or bloomy cheeses like brie will last about a week in your fridge. Aged cheeses like cheddar or manchego will last anywhere from 4 to 8 weeks in the fridge, but will start to dry out over time.

The catering tray is bigger than my refrigerator. Can I leave it out at room temperature?

Cheese will taste best at room temperature where you can experience its full aroma and texture. It should be taken out of the refrigerator at least 30 minutes before serving and will be safe at room temperature for many hours. Be sure to wrap and refrigerate any leftovers.

Can I freeze cheese?

We do not recommend freezing cheese. Freezing can affect the texture and taste of cheese. But, if texture is not important, like for use in a soup, you can freeze cheese and cheese rinds for later use.
